- Tidtad with Pusung Saging—a creative take on dinuguan with banana blossoms;
- Pititian San Luis—a local version of chicharon with the familiar crispy and savory goodness;
- Kilayin—tender and tangy pickled pork with just the perfect kick; a rich
- Kalderetang Bibi – slow-cooked duck in tomato and aromatic herbs;
- Pork Sisig – the iconic Kapampangan dish made of grilled pork maskara, chicken liver, onions, and kalamansi;
- Adobong Tugak – frogs cooked in soy sauce, vinegar, garlic, and bay leaves;
- Inihaw na Hito at Dalag – grilled delicacies paired with buro (fermented fish paste) and mustasa leaves.

Lutung Pesus also offers the seasonal Lelut Ulang, a congee dish made with giant river prawns.
